The temperature ratings for bamboo are the minimum temperatures before the bamboo starts to suffer damage. Usually the temperature can drop another 10 degrees before you will see plant kill. The wind is also a consideration; cold winds will cause more leaf burn than plain cold. There will also be more winter damage in the first years after starting your grove. In winter large leaf bamboos will suffer more leaf burn in the sun than in the shade.
